catching up

its been a busy few weeks around here. Here's what we've been up to.

Last weekend I spent some time preparing some meals to add to our freezer stash...I made a total of 12 meals~ almost all of them being blog reader suggested...they look so good~we cant wait to try them! This first batch I completed all in the time it took to listen to the whole 'All That I Can Say' cd~(thanks Kate!) By the time the last song ended they were in the freezer and the second batch went about half as fast with the help of my sister Lisa.

We also went to see Steven Curtis Champan and Michael W. Smith in concert last week...they were amazing and we had such a great time. My favorite part was to hear Steven Curtis Champan talk about their stories of adoption and the loss of their daughter Maria...it definitely hit home in many ways. Thanks Ms. 'Usher Lady' (sorry I didnt catch you name :) for your hug and encouragement! I am so glad you said hi!




On the 25th we were honored to witness the wedding vows exchanged by Nicole and Chad! It was such a beautiful wedding and Nicole made a beautiful bride. I hope they are having a great time in Mexico on there honeymoon and praying they stay away from the piggies ;)






We are going a little stir crazy waiting for a certain phone call so we decided to make a last minute weekend getaway to Traverse City...we dont have anything planned~ we are just going. and we are really looking forward to spending some time as a couple while we can! We'll share all about it when we get back.

Have fun!! I almost was going to write "Bring home some fudge" But that is Mackinaw Island, lol silly me!

Ok, the meals look good!!! I always say I'm going to do that, and I have yet to actually follow through. One of these days! Have fun on your get-a-way! I'm going stircrazy for you...I can't wait to see the blog/twitter that says "HE's HERE"!!!

I've seen Michael W. Smith in concert many years ago. He's amazing! I've loved his music since I was a little girl. I'm jealous.

Looks like you've got enough in the freezer to feed the two of you for a month! Congrats! That's a lot of work you won't have to do later. I can't wait to see the post that your new baby boy is here!

You and Robb are always in our prayers.

I wish I could make meals ahead of time and store them. I am just not organized in the food making part of my life.

I've been following your blog for a long time and have commented a few times, and you guys are in my prayers, and I am SO excited to meet your new son, I hope you'll share the story/photos here :) I also have been meaning to share one of my favorite (and SUPER easy) meals with you! Here goes:

Crockpot Chicken Tortilla Soup
-Add to a crockpot: 2-3 frozen chicken breasts, 2 cans chicken broth, 1 can mexican style stewed tomatoes, 1 small can (8oz) tomato paste, 1 can black beans (rinsed), frozen or canned corn (however much you want), 1 pkg taco seasoning, 1 tbsp worcestershire sauce, 1 tsp garlic, 2 handfuls crumbled tortilla chips (to thicken). You can also add whatever else would sound good to you :)
-Cook on low all day or high 4-6 hours
-Pull chicken out, shred, and return to crockpot
-Top with avocado, sour cream, cheese, chips, or anything else!

Seriously, this is the BEST chicken tortilla soup, it gets raves from everyone, and takes maaaybe 5 minutes to throw everything in together! And I love that I don't have to remember to defrost chicken, a very handy thing when you're a mama with a new baby :)

I am so looking forward to a bit of a break long enough to be able to cook some foods to store as well. It is definitely getting harder now that the boys are 13 and 18 months. VERY ACTIVE!!! haha

Counting down the days with you!!!! I had meal prep on my to-do list too. But now I'm not sure if I'm going to do it....We'll be gone for 3 weeks, I'm afraid the meals would taste awful by the time we get back!!!
